At Rifugio Vallata, every dish tells a story. A story of the land, the seasons, and ingredients gathered from the forests and meadows that surround us. Our cuisine is simple and genuine, inspired by the valley’s traditions yet enriched by the aromas and flavors that nature provides.

Local Ingredients, Crafted with Care

We believe in a cuisine that honors the land. That’s why we choose local ingredients, many of which we grow or gather ourselves—wild herbs, dandelion, elderflowers, and lichens. We respect the rhythms of nature, letting the seasons guide us in creating our dishes.

Our Dishes

Every day, we carefully and passionately prepare dishes that are part of our region’s culinary heritage:

  • Handmade gnocchi and pasta, crafted following traditional methods
  • Petucia, a historic preparation of minced sheep meat, seasoned with wild fennel seeds and smoked
  • Polenta, made with carefully selected flours
  • Pastiç, an ancient dish of fermented turnips and pork ribs, which became a Slow Food Presidia thanks to our dedication

To accompany the meal, we offer a selection of natural wines from small local producers, along with homemade liqueurs and grappa infused with herbs from our valley.
